Violet, You're Turning Violet

Like Violet Beauregarde, I, too, may turn into a giant blueberry. But that's okay, because they are so delicious that I don't think I'd care. Today was rather hectic because I went on an early trip to Busch Gardens, but I still had time to make a berry filled breakfast and dinner.


Overnight oats. My go-to breakfast when I have an early day.

In the mix:
- 1/2 cup oats
- 1/2 cup almond milk + 1/4 cup water
- 1 heaping tbsp soyogurt
- 1/4 cup mashed blueberries
- 1 tsp coconut oil
- 1/2 tbsp flax
- Cinnamon
- Stevia, to taste

Topped with shredded coconut, blueberries, banana and more cinnamon + flax. Note my foot creeping in the corner.

After a day of almost tossing my cookies on the sheikra roller coaster, seeing sad animals, and walking around for over 4 hours in the heat, I wanted something light, refreshing and fruity for dinner. So, my mind concocted this salad gem.


Romaine, clover sprouts, cucumbers, blueberries, candied walnuts and cranberries in a raw creamy orange ginger dressing.

I had candied walnuts and cranberries earlier in the day (tossed in 1 tsp agave and sea salt, baked at 300 for 20 mintues) for a snack that I ended up not having, so I thought they'd go well on the salad. The star was definitely the dressing, since aside from that it's your basic boring salad, so here's the recipe:

Raw creamy orange ginger dressing
Ingredients

- 1/2 orange, peeled and de-seeded
- 1/2 tbsp apple cider vinegar
- 1 1/2 tsp raw tahini
- 1/4 tsp ginger
- 1 clove garlic
- S&P

Instructions
- Dump everything in a blender or food processor and blend until smooth and creamy. Don't you love these "dump and blend" recipes?

This dressing was creamy but not overly thick; it coated the fruits and veggies nicely and added a light, refreshing bite that complimented everything well. I'd love to try this dressing on various greens (spring, frisée, spinach, etc) and add more fresh fruit. The good news is that it's pretty veritable and would add a brightness to almost any salad.


I also had a green smoothie with kale, 1/2 cup almond milk, 1/2 cup water, 1/2 banana, 1 tbsp rice protein powder and 1 tbsp flax. Basic, but tasty.

  3. The salad sounds great. I never think to put blueberries on my salads. Funny how you use something in one way (blueberries go on oatmeal and in Greek yogurt) but never think to use them in other ways.

  4. Fruit in salads is fantastic! You should definitely experiment with it. You're right, though, because even when I do use fruit in savory dishes, they usually include other sweet ingredients as well.
