A Perfect Dinner

A beautifully poached Ameraucana egg atop lightly steamed asparagus and maitake mushrooms (sent from Marx Foods) with a sprinkle of sea salt and fresh cracked pepper.

As I dipped a doughy piece of baguette into deep yellow yolk and sipped my wine, I found pure bliss. I feel like I'm discovering these foods for the first time, and I couldn't be happier.

This was actually the first time I've had a runny yolk and I'm in love! It's so creamy and decadent.

  3. I'm so glad you're doing well introducing eggs into your diet. I've been loving the eggs + shrooms + asparagus combo as well lately! Throw a tomato in there and I'm good to go!

  5. I've got a bunch of mushrooms leftover from my Marx sample. Looks like a great way to prepare them!

  6. I love moments like that - when not only the tastes but the "moment" feel completely right :)

I liked them a lot! I wanted to be able to actually taste them and not hide them in a dish, and I was surprised by how good and earthy they taste.

  11. Weirdly... this looks absolutely delicious to me. A true testament to your culinary skills (and your photography skills!) because I've never really liked eggs even in the pre-vegan days. (And I watch a LOT of food network, and even their food doesn't tempt me in the egg-realm!)

    Glad you're enjoying!

Haha, well thank you! I'm glad my beat up point and shoot camera does the job. ;)

  13. you do know what an egg is, right? chicken period, cholesterol. it has been proven that words like free-range and organic mean very little. the average hen lives a brief torturous life. also, when you eat fish, it has been murdered for your consumption. it doesn't matter that it's wild or organic. there's nothing humane about it. i know you are experimenting with your diet due to health issues but i hope you'll get a second opinion. animal products will not help you in the long run and may cause new unforseen problems. good luck on your journey.

Firstly, I appreciate you being respectful in your comment. However, I don't push my diet on anyone, so I'd also appreciate it if you (or others) did the same. I value the vegan lifestyle and still eat many things I used to because they're good for my health. Now I'm just eating other things I deem good for my health and things that I personally want to eat.

Oh, the cholesterol in eggs is healthy cholesterol, so long as you don't eat, say, a dozen a day.
