A beautifully poached Ameraucana egg atop lightly steamed asparagus and maitake mushrooms (sent from Marx Foods) with a sprinkle of sea salt and fresh cracked pepper.
As I dipped a doughy piece of baguette into deep yellow yolk and sipped my wine, I found pure bliss. I feel like I'm discovering these foods for the first time, and I couldn't be happier.
that does look perfect... I love a saucy yolk to get all over everything... :D

I'm so glad you're doing well introducing eggs into your diet. I've been loving the eggs + shrooms + asparagus combo as well lately! Throw a tomato in there and I'm good to go!

Weirdly... this looks absolutely delicious to me. A true testament to your culinary skills (and your photography skills!) because I've never really liked eggs even in the pre-vegan days. (And I watch a LOT of food network, and even their food doesn't tempt me in the egg-realm!)

you do know what an egg is, right? chicken period, cholesterol. it has been proven that words like free-range and organic mean very little. the average hen lives a brief torturous life. also, when you eat fish, it has been murdered for your consumption. it doesn't matter that it's wild or organic. there's nothing humane about it. i know you are experimenting with your diet due to health issues but i hope you'll get a second opinion. animal products will not help you in the long run and may cause new unforseen problems. good luck on your journey.

ReplyDeleteFirstly, I appreciate you being respectful in your comment. However, I don't push my diet on anyone, so I'd also appreciate it if you (or others) did the same. I value the vegan lifestyle and still eat many things I used to because they're good for my health. Now I'm just eating other things I deem good for my health and things that I personally want to eat.
Oh, the cholesterol in eggs is healthy cholesterol, so long as you don't eat, say, a dozen a day.
