Rawesome

It was beautiful, blue and sunny in Florida today, so when it came time for dinner I knew I wanted something light and raw. So I tried something new and paired it with something we all know and love.


Cool as a cucumber avocado soup
Ingredients
- 1 large cucumber (or 2 small), peeled, seeded and cut into chunks
- 1/2 avocado
- 1/2 tbsp lime juice
- 1 garlic clove
- 1 tsp cilantro
- S&P
- Cucumber, avocado and tomato, for garnish (optional)

Instructions

- Put all ingredients (sans garnish) in a blender or food processor and blend until smooth. Enjoy!


This was really crisp and refreshing and the avocado added a velvety creaminess.


Paired with a lovely salad of romaine, baby spinach, blueberries, raw walnuts and blueberry balsamic. Perfectly simple.

Over the past few months I've been really interested in raw foods. My awesome experiences at Cafe 118 (and addiction to their s'mores) only intensified my desire to experiment and get into raw cuisine even more. Everything raw that I've made or tried has definitely been some of the best dishes that have ever graced my lips. I recently heard about 105 Degrees Academy and I'm now planning on getting certified as a raw foods chef after I graduate.

In other news, this week I feel like something is going wonky with my body. Whenever I exercise I feel more tired than usual and I sweat a lot more. I've even noticed that I sweat a lot doing yoga, even gentle hatha flows. I also haven't been getting a great cardio workout, which is really bumming me out. After about 20 minutes I just feel too tired to continue. I'm not sure if it's something in my diet or if I'm overworking my body. I'm also not sure if I should take a couple days off or just try to break through the funk. The one exercise I do want to do is bike, which I should be doing this weekend when I go to Daytona Beach!

  3. Make sure you're getting enough hydration... easy to get dehydrated in the humidity. Make sure you're getting sufficient protein, too... get some lentils in you!

    Sounds kind of like a "yin" deficiency... might not do anything, but it's worth a shot!

  4. I think that's one of my problems, actually. I definitely need to drink a bit more water, especially when I start the day with coffee.

  5. Just tried this...thought I had cilantro, but I don't but it still tastes wonderful!
