Here comes the sun

After many days of rain, Massachusetts finally got a day of sun. Beautiful, warm 70 degree sun. The kind of day where people are lounging outside around campus, smoking hookah, feeding the ducks or throwing a frisbee. It's also the kind of day where I don't want to spend a long time cooking and want something that reminds me of summer. I had every intention of cooking risotto tonight, but I just wasn't in the mood. So, after my 2 mile(!!) run, I whipped this together:


Grilled bbq tempeh, baked potato topped with S&P, Earth Balance and nooch, and steamed snow peas.
(If only I could find corn on the cob)

The key to the tempeh (for me) is steaming it in simmering water for 5-10 minutes. It plumps up and becomes tender and juicy. The other key is the 'dry rub', which is simple. I just rub the outside with paprika, cayenne, S&P, garlic powder and onion powder. I didn't measure, just felt it out. Then I grilled it for 2-3 minutes on each side and tossed it in a simmering mixture of Annie's sweet & spicy bbq sauce and 2 tbsp soy sauce. Simple and super tender.

I do the same thing with thawed frozen tofu and it tastes amazing.

I continued the summery fare into the night. Even though I still have many cocoa peanut butter rice krispie treats left, I wanted ice cream. So, I threw this together:


Purely Decadent cherry amaretto, berries and a handful of puffed rice cereal. To be honest, I would have preferred it on a cone, but you can't always get what you want! Now if only someone found a way to make ice cream more fulfilling, that'd be great.

So, the day wasn't filled with very exciting eats, but sometimes a nice day is more important.

  4. I agree...vegan is the way to be. It's good for the planet, the animals and of course, for us...both physically and emotionally with compassion, love and kindness.

  5. I wish I had a grill! (And I wish it was nice enough outside here to do some grilling.) Dry-rubbing the tempeh is a great idea! And Purely Decadent coconut milk ice cream is about as divine as it gets! I am madly in love with the Turtle Trails flavor. It just doesn't get any more decadent than that!

  7. That's why I invest in an indoor grill! Even though it doesn't have the 'grill' flavor, I just love that it creates beautiful grill marks and a nice crust.

    That kind sounds yum. I actually prefer Tempt hemp ice cream - I love the creamy texture and flavor. I definitely recommend it if you haven't tried it yet.
